(NC)-Sometimes all it takes is a simple sauce to take an old favourite to new heights and make dinnertime feel more like an upscale dining experience. This recipe, inspired by fresh and dazzling Mexican flavours, will elevate the simplest of dishes such as grilled chicken, salmon or shrimp, by adding flavour, moisture and visual appeal. It also works well as a dip for crudités. It can be made ahead and refrigerated for up to three days until ready to use. Creamy Almond-Caper Sauce

Ingredients:

1/4 cup sliced almonds

2 tablespoons unsalted butter

2 scallions, thinly sliced, including green tops

2 tablespoons capers, drained

1 clove garlic, minced

3/4 cup sour cream

2 tablespoons chopped fresh cilantro

1 1/2 teaspoons fresh lime juice

1/2 teaspoon fresh grated lime zest

Pinch of ground cayenne pepper


Directions:

Place almonds in a single layer in a dry skillet, and turn heat to medium. Toast for about 2 minutes, stirring occasionally and then set aside. Melt the butter in a medium skillet over medium heat. Add the scallions, capers and garlic, and cook, stirring constantly, 1 to 2 minutes or until scallions are softened but retain their bright green colour.

Transfer mixture to a medium bowl and cool slightly. Stir in sour cream, almonds, cilantro, lime juice, lime zest and cayenne.
